  • 1 avocado, sliced
  • 1 raw beetroot, grated
  • 1 carrot, grated
  • 1 cup cooked lima beans (you can use an alternative bean if you like)
  • 1 pinch of natural rock salt
  • Freshly ripped mint
  • Dressing Ingredients
  • Lemon juice
  • Olive oil
  • Apple cider vinegar dressing

Cooking Directions

  1. Grate the beetroot and carrot and add to a bowl, top with the sliced avocado. Either add to the lima beans topped with salt, lemon and fresh mint to the salad or have the beans as a side dish.
  2. Note:Make the salad dressing separately and then mix thoroughly into the salad.
