  • 2 avocados, large and ripe
  • 3 tbsp plain flour
  • 1/2 tsp chilli powder
  • 1/2 tsp salt
  • 1 pinch of black pepper
  • 2 large eggs
  • 100g panko breadcrumbs
  • 1 tbsp olive oil
  • Sea salt

      Cooking Directions

      1. Preheat the oven to 220°C. Line a large baking tray with parchment paper.
      2. Cut each avocado in half lengthways, peel off the skin and remove the stones. Cut each avocado half into 3 or 4 pieces, depending on size, so that you have 12–16 long slices in total.
      3. You will need 3 bowls for this next step.  Add the flour, chilli powder, salt and pepper to 1 bowl.  In another add the 2 eggs and beat them.  In the last bowl add the Panko breadcrumbs.  Dip each avocado slice in the flour mixture, followed by the egg, then coat in Panko breadcrumbs and place on the lined tray. Repeat until all of your avocado slices have been dipped and are on the tray.
      4. Drizzle olive oil over your slices and bake in the oven for 15–20 minutes until crisp and golden brown.
