Baked Cod with Lemon and Olive Oil

  • 1 cod fillet
  • 1/2 lemon
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1 pinch paprika
  • 1 courgette, chopped into inch chunks
  • 1 carrot, chopped into inch chunks
  • 50g brown rice (omit if following 30 Day Get Lean diet)
  • 500ml water

Cooking Directions

  1. Preheat the oven to 200c.
  2. Bring the water to a boil in a saucepan, reduce the heat to medium/low, add the brown rice and cover with a lid. Simmer until the water is absorbed and the rice is tender - this will take around 30 minutes.

  3. Meanwhile arrange the fillet in a baking dish with the courgette and carrot. Drizzle with lemon juice and oil, and sprinkle with the garlic and paprika. Gentle rub the garlic and paprika into the fish.

  4. Bake for 20 minutes or until the flesh is completely opaque.

  5. Serve the fish, vegetables and rice on a plate with the pan juices spooned over the top
