Ingredients

  • 3 large tomatoes
  • 6 finely chopped mushrooms
  • 1 clove garlic, minced
  • 1 spring onion, chopped
  • Black pepper to taste

Cooking Directions

  1. Preheat oven to 190 degrees.
  2. Slice off the top of each tomato, scoop out the pulp, and set the tomato base in a baking dish.
  3. Combine pulp with remaining ingredients and fill each tomato half.  Add the tomato top back on top of the tomato base.

  4. Bake in the oven for 10 - 15 minutes until the tomatoes starts to go soft.
