Banana and Cinnamon Omelette
- 2 eggs
- 1 banana
- 1 tsp coconut oil
- 1 pinch of salt
- 2 pinches of cinnamon (adjust to your taste)
- A squeeze of honey
- Handful of berries
- In a bowl, whisk the eggs together with a pinch of salt and set aside.
In a small frying pan, heat 2 tsp of coconut oil, once up to heat, slice the banana into the pan to brown ever so slightly. Sprinkle cinnamon on top of the bananas.
Pour the egg mix into the pan & allow the omelette to cook on one side.
Flip over to cook on the other side.
Serve when ready, adding the berries and honey on top.
