Black Bean Patties
- 1 can of cooked black beans
- 1 cup of cooked quinoa
- 1 onion, finely chopped
- 1 red pepper, finely chopped
- 2 garlic cloves, chopped
- Small handful of parsley, ripped/chopped finely
- Sprinkle of cumin
- Brown the onion in a pan and then add the red pepper, black beans and the garlic.
Once cooked for 2mins, add the quinoa (cooked), parsley and spices.
Remove from the pan and add all ingredients into the blender.
Blend together, until mixed.
Remove from the blender and make as many palm sized patties (same thickness throughout will ensure even cooking).
Shallow fry in a frying pan (in coconut oil) for 4 minutes on each side or until cooked through.
Tip: Ensure the patties are bound together firmly before cooking, otherwise they will break apart.
Serve with an avocado salsa dip. Loosely chop a ripe avocado and radish and add lemon.
