- 1 large or 2 medium cooked beetroot, sliced
- 2 small handfuls of shredded lettuce (any kind)
- 1 large or 2 small-medium tomatoes, sliced
- 1/2 avocado
- 1 large slice German rye bread (halved), or 2 small
- Extra virgin olive oil, pink Himalayan salt and pepper to season.
- Toast the German rye.
Layer the lettuce, beetroot, avocado and tomato on top!
Season with a drizzle of extra virgin olive oil, salt and pepper
