Ingredients

  • 1 large or 2 medium cooked beetroot, sliced
  • 2 small handfuls of shredded lettuce (any kind)
  • 1 large or 2 small-medium tomatoes, sliced
  • 1/2 avocado
  • 1 large slice German rye bread (halved), or 2 small
  • Extra virgin olive oil, pink Himalayan salt and pepper to season.

Cooking Directions

  1. Toast the German rye.
  2. Layer the lettuce, beetroot, avocado and tomato on top!

  3. Season with a drizzle of extra virgin olive oil, salt and pepper
