Carrot and Coriander Soup
- 2 tbsp coconut oil or ghee or butter
- 2 onions
- coriander to taste
- 6 cloves garlic
- 1 tsp of cumin and/or turmeric
- 3 carrots, peeled and chopped
- 1 medium sweet potato
- 8 cups vegetable stock
- 1/4 cup of parsley
- Salt and cayenne pepper to taste
- Cook onions and garlic first.
Add carrots and sweet potatoes to saut̩.
Pour in vegetable stock.
Add cumin and turmeric.
Bring to boil and let simmer until vegetables are soft.
Season, add coriander and blend.
