  • 1 head of cauliflower
  • 1 tsp chili flakes (optional)
  • 1 large egg
  • 4 tablespoons of tomato puree
  • 125g mozzarella, sliced
  • Optional pizza toppings: courgette slices, red pepper, yellow pepper, orange pepper, mushrooms, tomatoes

Cooking Directions

  1. Preheat the oven to 180.
  2. Place the cauliflower in a food processor and whizz until very fine

  3. Add the cauliflower into a large bowl and mix in the egg, chili flakes and a quarter of the mozzarella cheese. The mixture should be wet

  4. Line a large baking tray with nonstick baking paper or grease well and divide the mixture making one medium sized bases, 2 small bases or a number of smaller bases. You can do this by making into balls and squashing flat into patty shapes.

  5. Bake for 20 minutes until the bases turn golden.

  6. Remove from the oven and with a palette knife release from the paper or tray to stop any sticking.

  7. Spread the tops with tomato puree add any toppings and mozzarella.

  8. Return to the oven on the baking tray lined and bake for 10 minutes before serving.
