Ingredients

  • 500g x diced chicken
  • Olive oil
  • 2 x ripe avocados, diced
  • 1 x mango, diced
  • 4 x tomato, diced
  • ¼ x red onion, diced
  • 1 x jalapeño pepper, thinly sliced
  • 1 tablespoon lime juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Cooking Directions

  1. Brush the diced chicken with olive oil on both sides. Preheat a pan over a medium heat and carefully add the chicken.  Cook for 11-15 minutes until the chicken is cooked through.  Stir occasionally. 
  2. Meanwhile in a medium bowl, combine the avocado, mango, tomato, red onion, jalapeño, lime juice, salt, and pepper.
  3. Add in the cooked chicken and mix well before serving.
