Chicken and Nut Salad
- 1 diced chicken breast.
- 4 handfuls of chopped lettuce.
- 30g mixed nuts.
- 1 tablespoon virgin olive oil.
- Drizzle of sweet chilli sauce (to your taste).
- Preheat the oven to 180C, gas mark 4.
Place a layer of foil on a baking tray, add the diced chicken pieces, then bake in the oven for 15 minutes, or until cooked through.
Combine the chicken and all other ingredients into a bowl and enjoy!
