Ingredients

  • 20g cooked quinoa
  • 1 cooked chicken breast
  • 1 mango chopped 
  • Half a red pepper chopped 
  • Half a red onion, peeled and chopped 
  • Handful of mixed spinach, rocket & watercress
  • 2 teaspoon of fresh lemon juice

Cooking Directions

  1. Combine all of the ingredients in a bowl (except chicken) and squeeze the juice from a fresh lemon over the ingredients.
  2. Slice up the chicken and mix through.
