Curried Tofu Scamble with Spinach

Ingredients

  • 1 tsp olive oil
  • 1 red onion, diced 
  • 3 cloves garlic, minced
  • 300g of extra firm tofu, pressed and crumbled
  • 1 tsp curry powder
  • 1/2 tsp turmeric
  • 1/2 tsp cumin (optional)
  • 2 tomatoes, diced 
  • 3 handfuls of spinach
  • 1/2 red pepper, sliced 

Cooking Directions

  1. Sautee the garlic and onion in olive in a large pan. Allow to cook for 3 to 5 minutes, or until the onion starts to get soft.
  2. Add the crumbled tofu, and give it a quick stir, then add the curry powder, turmeric, and cumin, stirring well to make sure the spices coat the tofu well.

  3. Cook for 2-3 minutes, then add the diced tomatoes, and allow to heat, stirring frequently for another 3 minutes or so, until tofu is hot and cooked.

  4. Finally, add the spinach, cover the pan, and cook a minute or two, just until the spinach is wilted, stirring well.

  5. Serve adding the red pepper on top.
