Curried Tofu Scamble with Spinach
- 1 tsp olive oil
- 1 red onion, diced
- 3 cloves garlic, minced
- 300g of extra firm tofu, pressed and crumbled
- 1 tsp curry powder
- 1/2 tsp turmeric
- 1/2 tsp cumin (optional)
- 2 tomatoes, diced
- 3 handfuls of spinach
- 1/2 red pepper, sliced
- Sautee the garlic and onion in olive in a large pan. Allow to cook for 3 to 5 minutes, or until the onion starts to get soft.
Add the crumbled tofu, and give it a quick stir, then add the curry powder, turmeric, and cumin, stirring well to make sure the spices coat the tofu well.
Cook for 2-3 minutes, then add the diced tomatoes, and allow to heat, stirring frequently for another 3 minutes or so, until tofu is hot and cooked.
Finally, add the spinach, cover the pan, and cook a minute or two, just until the spinach is wilted, stirring well.
Serve adding the red pepper on top.
