Dark Chocolate Chip Banana bites

  • 3 medium bananas
  • 3 tablespoons dark chocolate chips
  • Cupcake cases (ideally silicone or foil ones as they are easier to remove) or a metal cupcake tray

Cooking Directions

  1. Peel and slice the bananas, and place them on a lined baked tray or plate in the freezer for at least two hours. Limit the amount they are overlapped as it can make blending a little harder.
  2. Take the bananas out of the freezer and let them thaw for a few minutes.

  3. Add the bananas to a blender and blitz until a thick, creamy looking ice cream forms.

  4. his can take several minutes.

  5. Set aside one tablespoon of the mini chocolate chips and stir the rest of the chips into the banana ice cream.

  6. Add a scoop of chocolate chip banana mixture into a cupcake case or well in the cupcake tray. You can either add the extra chocolate chips now or wait until after they come out of the freezer - your choice!

  7. Place back into the freezer for at least an hour.

  8. Take out 1-2 banana bites for each person. If you are using a metal tray you should be able to pop them out with a dinner knife.

  9. Allow to thaw for a couple minutes and enjoy!
