Ingredients

  • 1 cm of fennel, chopped
  • 1 small carrot, peeled and chopped finely
  • 1 handful purple cabbage, chopped
  • 1 spring onion
  • 1 stick of celery chopped

  • Dressing Ingredients
  • Splash of extra virgin olive oil
  • 2 leaves of fresh mint (chopped up)
  • Cayenne pepper (to taste)
  • 1 clove garlic (minced/chopped very finely)
  • 1 tbsp flaxseeds (optional)

Cooking Directions

  1. Mix all the salad ingredients together.
  2. Make the dressing in a separate bowl and add to the salad, as required.
