Fennel Mixed Salad
- 1 cm of fennel, chopped
- 1 small carrot, peeled and chopped finely
- 1 handful purple cabbage, chopped
- 1 spring onion
- 1 stick of celery chopped
- Dressing Ingredients
- Splash of extra virgin olive oil
- 2 leaves of fresh mint (chopped up)
- Cayenne pepper (to taste)
- 1 clove garlic (minced/chopped very finely)
- 1 tbsp flaxseeds (optional)
- Mix all the salad ingredients together.
Make the dressing in a separate bowl and add to the salad, as required.
