Ingredients

  • 4 tbsp feta cheese, crumbled
  • 4 tbsp pomegranate seeds
  • 1 small handful pine nuts
  • ½ bag of mixed salad leaves
  • 1 tablespoon of extra virgin olive oil
  • ¼ cucumber, sliced
  • 6 mint leaves, finely sliced (optional)

      Cooking Directions

      1. Add the salad leaves, pomegranate seeds, cucumber and feta cheese to a bowl. Mix well.
      2. Sprinkle the pine nuts and mint leaves over the salad.
      3. Drizzle with extra virgin olive oil and serve.
