Feta and Pomegranate Salad
- 4 tbsp feta cheese, crumbled
- 4 tbsp pomegranate seeds
- 1 small handful pine nuts
- ½ bag of mixed salad leaves
- 1 tablespoon of extra virgin olive oil
- Balsamic vinegar to taste
- ¼ cucumber, sliced
- 6 mint leaves, finely sliced (optional)
- Add the salad leaves, pomegranate seeds, cucumber and feta cheese to a bowl. Mix well.
- Sprinkle the pine nuts and mint leaves over the salad.
- Drizzle with extra virgin olive oil and balsamic vinegar before serving.
