Folded Salmon Omelette
- 2 whole eggs
- 75g smoked salmon
- 1tbsp coconut oil
- 1tsp cinnamon
- Salt to taste
- In a small frying pan, heat the coconut oil over a medium heat.
- Meanwhile in a bowl, whisk the eggs together with the cinnamon, a pinch of salt and set aside.
Once the oil has melted and is hot pour the egg mix into the pan & allow the omelette to cook on one side.
Flip over to cook on the other side.
Once cooked add the omelette to a plate and add the salmon to one side of the omelette. Fold over the omelette so the salmon is in the middle and enjoy!
