Fruit and Quinoa
- 45g Quinoa
- 200ml of Water
- 30g of Mixed Nuts
- 50g of Berries
- 1 Banana
- 1 Kiwi
- 1/2 of a Lemon
- 30g of Greek Yoghurt
- Bring the quinoa and water to the boil in a saucepan over a medium heat, then pop on the lid, turn down the heat and simmer for 15 minutes.
When the quinoa is cooked, drain, place in a bowl and toss with the blueberries, sliced banana and kiwi fruit.
Sprinkle with the mixed nuts, and top with the juice from the lemon.
Serve half for breakfast today; cover the remainder with cling film and keep in the fridge until required - although saving it is going to test your willpower as it tastes so good!
For the 2nd Serving: Mix 30g of Full-Fat Greek yoghurt with the remaining fruity quinoa and serve immediately.
