- 1/4 cucumber (diced)
- 6-8 cherry tomatoes (halved)
- 1/2 cup feta cheese in chunks (1cm pieces)
- 1/2 cup olives of your choice (sliced or whole)
- Pink Himalayan salt, black pepper
- 1 tsp dried/fresh oregano
- 2 tsp olive oil
- Juice of 1/2 lemon
- 1 tsp natural honey
- In a bowl, make the dressing by combining all ingredients and whisking together with a fork.
For the salad, combine all ingredients in a single serving sized bowl.
Cover with dressing and if adding protein, such as a cooked chicken breast, a fillet of fish or boiled/poached egg, you can add this just before serving.
Optional: top with chicken, salmon or egg.
