  • 1/4 cucumber (diced)
  • 6-8 cherry tomatoes (halved)
  • 1/2 cup feta cheese in chunks (1cm pieces)
  • 1/2 cup olives of your choice (sliced or whole)

Dressing Ingredients
  • Pink Himalayan salt, black pepper
  • 1 tsp dried/fresh oregano
  • 2 tsp olive oil
  • Juice of 1/2 lemon
  • 1 tsp natural honey

Cooking Directions

  1. In a bowl, make the dressing by combining all ingredients and whisking together with a fork.
  2. For the salad, combine all ingredients in a single serving sized bowl.

  3. Cover with dressing and if adding protein, such as a cooked chicken breast, a fillet of fish or boiled/poached egg, you can add this just before serving.

  4. Optional: top with chicken, salmon or egg.
