Grilled Cherry Tomato Toast
- 4 cherry tomatoes
- A few sprigs of thyme
- 10ml of virgin olive oil
- 2 slices of rye bread
- 50g of feta cheese
- 1/4 white onion (optional)
- Pinch of black pepper
- Quarter the cherry tomatoes and place in a bowl along with the thyme and olive oil. Leave them to sit for 2 minutes, then mix together.
Cover a baking tray with foil and place the 2 slices of rye bread in the centre.
Place the cherry tomatoes onto the slices of rye bread, saving the leftover juice in the bowl Crumble the feta cheese into fine pieces, and place on top of the cherry tomatoes.
For some added crunch, dice the white onion, add a good handful to the tomato juices in the bowl and mix together, then drizzle on top of the feta cheese and season with pepper to taste.
Grill for 5 minutes until the cheese is bubbling, then serve immediately.
