Mexican Lettuce Wraps
- 150g minced beef
- 1/2 red pepper
- 1/2 yellow pepper
- 1/3 tsp onion powder
- 1 garlic clove, minced
- 1/2 tsp cumin
- Olive oil
- Gem lettuce
- Chili flakes (optional)
- Lime juice (optional)
- Heat the olive oil in a pan over a medium heat.
Add the minced beef until brown.
Add the peppers, onion powder, garlic and cumin. Mix the mixture well.
Cook for a further 10 mins or until the mince is cooked through.
Separate the gem leaves and spoon the beef mixture into the middle of each leaf (the amount of leaves used depends on their size). Add chili flakes and squeeze of lime juice if using.
Roll up each gem leaf before eating to stop any food escaping!
