Moroccan Twist Salad
- 2 large carrots
- 1 large beetroot
- 3 medium radish
- 1/2 cucumber finely chopped in quarters
- 1cm ginger
- 2 tbsp Apple cider vinegar
- 1 tbsp extra virgin olive oil
- Black pepper
- Alfalfa sprouts (found in any major supermarket)
- 1 cup green lentils (cooked)
- Grate the carrot, beetroot, ginger and radish and mix in a bowl and add the apple cider vinegar, olive oil and black pepper.
Add Alfalfa to the top on a bed of cooked green lentils.
