Ingredients

  • 2 large carrots
  • 1 large beetroot
  • 3 medium radish
  • 1/2 cucumber finely chopped in quarters
  • 1cm ginger
  • 2 tbsp Apple cider vinegar
  • 1 tbsp extra virgin olive oil
  • Black pepper
  • Alfalfa sprouts (found in any major supermarket)
  • 1 cup green lentils (cooked)

Cooking Directions

  1. Grate the carrot, beetroot, ginger and radish and mix in a bowl and add the apple cider vinegar, olive oil and black pepper.
  2. Add Alfalfa to the top on a bed of cooked green lentils.
