Ingredients

  • 20g of cooked quinoa (follow directions on packet)
  • 1 red onion, chopped
  • 1 tomatoes, chopped
  • 1/2 red pepper, chopped
  • 1 clove garlic, Crushed
  • 2 tablespoon of lemon juice
  • 2 large peppers (colour of your choice)
  • Virgin olive oil

Cooking Directions

  1. Pre-heat the oven to 200 degrees.
  2. Heat the oil in a pan. Fry off onions, garlic and chopped pepper for 2 minutes then add in quinoa and cook for further 1 min

  3. Cut the tops of the peppers and de-seed.

  4. Stuff the peppers with the warm mixture, place in a dish, cover with foil and cook in the oven for 20-25mins.

  5. Drizzle olive oil in peppers once cooked and serve.
