Pea and Parsley Crepes
- 20g of cooked quinoa (follow directions on packet)
- 1 red onion, chopped
- 1 tomatoes, chopped
- 1/2 red pepper, chopped
- 1 clove garlic, Crushed
- 2 tablespoon of lemon juice
- 2 large peppers (colour of your choice)
- Virgin olive oil
- Pre-heat the oven to 200 degrees.
Heat the oil in a pan. Fry off onions, garlic and chopped pepper for 2 minutes then add in quinoa and cook for further 1 min
Cut the tops of the peppers and de-seed.
Stuff the peppers with the warm mixture, place in a dish, cover with foil and cook in the oven for 20-25mins.
Drizzle olive oil in peppers once cooked and serve.
