  • 1-2 eggs
  • 2 handfuls of baby spinach
  • Extra virgin olive oil
  • Pink Himalayan salt and black pepper

Cooking Directions

  1. Boil or poach the eggs (as you prefer):
  2. 5 mins = runny yolk

  3. 7 mins = sticky (medium) yolk

  4. 10 mins = hard boiled

  5. Serve eggs on a bed of spinach, dress with extra virgin olive oil, pink Himalayan salt and black pepper.
