Prawn and Spinach Salad

  • 100g cooked prawns 
  • 20g mixed seeds (omit from 30 Day Get Lean)
  • 60g spinach
  • 2 tbsp of virgin olive oil
  • 1 lemon
  • Pinch of smoked paprika 

Cooking Directions

  1. Heat the prawns through in a hot, dry non-stick pan for 2 minutes, stirring frequently.
  2. Toss in the mixed seeds, and cook lightly for a further 2 minutes, again stirring frequently.

  3. Put the spinach in a bowl, drizzle with the olive oil and top with the prawn mixture. Add a squeeze of lemon and a pinch of smoked paprika to taste.

  4. You can add any additional salad vegetables that you wish such as cherry tomatoes, cucumber or radishes.
