Prawn and Spinach Salad
- 100g cooked prawns
- 20g mixed seeds (omit from 30 Day Get Lean)
- 60g spinach
- 2 tbsp of virgin olive oil
- 1 lemon
- Pinch of smoked paprika
- Heat the prawns through in a hot, dry non-stick pan for 2 minutes, stirring frequently.
Toss in the mixed seeds, and cook lightly for a further 2 minutes, again stirring frequently.
Put the spinach in a bowl, drizzle with the olive oil and top with the prawn mixture. Add a squeeze of lemon and a pinch of smoked paprika to taste.
You can add any additional salad vegetables that you wish such as cherry tomatoes, cucumber or radishes.
