Quinoa Tabbouleh for 1
- 5 cherry tomatoes, halved
- 1/2 onion (1/4 if a big onion), chopped finely
- 1 stick of celery, chopped finely
- 1/2 cucumber, chopped finely
- 1/2 lemon
- 1/2 yellow pepper, chopped finely.
- 1/2 - 1 tablespoon virgin olive oil, depending on your taste liking
- 40g quinoa
- 200ml water
- Bring the quinoa and the water to the boil in a saucepan over a medium heat, then pop on the lid, turn down the heat and simmer for 15 minutes.
Mix all the ingredients into a bowl with the quinoa and serve.
