Ingredients

  • 5 cherry tomatoes, halved
  • 1/2 onion (1/4 if a big onion), chopped finely
  • 1 stick of celery, chopped finely
  • 1/2 cucumber, chopped finely
  • 1/2 lemon
  • 1/2 yellow pepper, chopped finely.
  • 1/2 - 1 tablespoon virgin olive oil, depending on your taste liking
  • 40g quinoa
  • 200ml water

Cooking Directions

  1. Bring the quinoa and the water to the boil in a saucepan over a medium heat, then pop on the lid, turn down the heat and simmer for 15 minutes.
  2. Mix all the ingredients into a bowl with the quinoa and serve.
