Ingredients

  • 1 red cabbage
  • 2 apples peeled and cored
  • Cinnamon stick
  • 1 teaspoon nutmeg
  • 2 star anise
  • Splash red wine
  • 1 onion
  • 2 Cloves garlic
  • 150ml Veg stock

Cooking Directions

  1. Heat the oil in a large saucepan. Add the onion, garlic, red cabbage and apple and cook gently for 5 minutes. .
  2. Add the cinnamon or nutmeg and the vegetable stock. Bring to the boil, then reduce the heat and simmer gently for 15-20 minutes until most of the liquid has evaporated and the vegetables are tender.

  3. Season to taste and serve
