Roasted Sweet Potato
- 1 small or 1 large sweet potato per person
- 1-2 red onions
- Pink Himalayan Salt and black pepper
- Peel and chop sweet potato to desired serving size.
Brush with coconut oil and season with pink salt and black pepper.
Roast a whole bulb of garlic (slice the top off to expose one end of the bulb) amongst the potatoes as well as a few quarters of red onion, to add aroma and flavour.
Roast in oven tray at around 180c for 40-50mins.
