Ingredients

  • 1 small or 1 large sweet potato per person
  • 1-2 red onions
  • Pink Himalayan Salt and black pepper

Cooking Directions

  1. Peel and chop sweet potato to desired serving size.
  2. Brush with coconut oil and season with pink salt and black pepper.

  3. Roast a whole bulb of garlic (slice the top off to expose one end of the bulb) amongst the potatoes as well as a few quarters of red onion, to add aroma and flavour.

  4. Roast in oven tray at around 180c for 40-50mins.
