Ingredients

  • Slice any vegetables you desire e.g. beetroot, butternut squash, sweet potato, courgettes, peppers, aubergine etc

Cooking Directions

  1. Brush the vegetables with coconut oil or olive oil, season with herbs such as oregano or just with salt and pepper.
  2. Cook the vegetables in an open oven tray at around 180c for 45-50mins; or until cooked to your liking.
