Salmon and Broccoli Mash
- 350 g broccoli
- 30 ml fresh basil or fresh parsley, finely chopped
- 40 g butter
- ½ garlic clove
- Salt and pepper to taste
- 2 x salmon fillets
- Preheat the oven to 160C, gas mark 2 and cover a baking tray in foil.
Place the salmon fillet in the oven for 10-15 minutes until cooked through.
Meanwhile, cook the broccoli in plenty of lightly salted water for a couple of minutes – just enough to retain a somewhat firm texture. Discard the water. Blend with the parsley, butter and garlic in a food processor. Season with salt and pepper to taste.
- Serve piping hot with the salmon!
