Salmon and Broccoli Mash

  • 350 g broccoli
  • 30 ml fresh basil or fresh parsley, finely chopped
  • 40 g butter
  • ½ garlic clove
  • Salt and pepper to taste
  • 2 x salmon fillets

Cooking Directions

  1. Preheat the oven to 160C, gas mark 2 and cover a baking tray in foil.
  2. Place the salmon fillet in the oven for 10-15 minutes until cooked through.

  3. Meanwhile, cook the broccoli in plenty of lightly salted water for a couple of minutes – just enough to retain a somewhat firm texture. Discard the water.  Blend with the parsley, butter and garlic in a food processor.  Season with salt and pepper to taste.

  4. Serve piping hot with the salmon!
