Ingredients

  • 1/2 cup cooked quinoa
  • 1-2 eggs
  • 1 tsp coconut oil
  • 2 standard sized pieces of smoked salmon (sliced into small pieces) or 1 piece fresh salmon fillet steamed or baked

Cooking Directions

  1. Warm a pan to medium heat and melt a teaspoon of coconut oil. Add cooked quinoa and 2 eggs.
  2. Stir-fry together as the egg cooks (like egg fried rice).

  3. Flake in 1 piece of cooked salmon fillet or add diced smoked salmon instead (choose based on your preference).

  4. Season to taste.
