Salmon and Scrambled Egg Quinoa
- 1/2 cup cooked quinoa
- 1-2 eggs
- 1 tsp coconut oil
- 2 standard sized pieces of smoked salmon (sliced into small pieces) or 1 piece fresh salmon fillet steamed or baked
- Warm a pan to medium heat and melt a teaspoon of coconut oil. Add cooked quinoa and 2 eggs.
Stir-fry together as the egg cooks (like egg fried rice).
Flake in 1 piece of cooked salmon fillet or add diced smoked salmon instead (choose based on your preference).
Season to taste.
