Salmon with Olive and Garlic Sauce

  • 2 salmon fillets
  • Olives, 1 handful and halved
  • 2 cloves of garlic, finely chopped juice of 1 lemon (cook lightly through in a pan)
  • 2 basil leaves
  • 1 tbsp Dijon mustard

Cooking Directions

  1. Mix the cooked garlic, mustard, lemon juice, basil and olives together in a bowl.
  2. Cook the salmon by either steaming it or searing it in a hot pan with a bit of coconut oil and salt and pepper until slightly coloured and then add it to the oven at 180c for 10-15 minutes depending on the thickness of the fillets.

  3. Add the mixture to the top of the salmon and serve with steamed green vegetables.

  4. Tip: Salmon can be cooked to varying degrees, depending on your preference. In this case we suggest checking it with a fork to make sure it is a light pink all the way through so when you break it apart it is flaky.
