- *Remove bacon to turn into a vegetarian/vegan dish
- 1 head cauliflower
- 1 teaspoon olive oil
- sea salt
- black pepper
- 2 slices bacon
- 1/2 of a pomegranate, de-seeded (or you could use 2 handfuls of cranberries) (omit from 30 day lean)
- Preheat oven to 200c. .
Trim and rinse the cauliflower. Break it into bite-size pieces.
In a large bowl, mix the cauliflower with the olive oil, salt and pepper.
Transfer the cauliflower to a baking sheet.
Cut the bacon into small pieces and sprinkle on the baking sheet with the cauliflower.
Bake for 15-20 minutes, stirring halfway through.
