Ingredients

  • *Remove bacon to turn into a vegetarian/vegan dish
  • 1 head cauliflower
  • 1 teaspoon olive oil
  • sea salt
  • black pepper
  • 2 slices bacon
  • 1/2 of a pomegranate, de-seeded (or you could use 2 handfuls of cranberries) (omit from 30 day lean)

Cooking Directions

  1. Preheat oven to 200c. .
  2. Trim and rinse the cauliflower. Break it into bite-size pieces.

  3. In a large bowl, mix the cauliflower with the olive oil, salt and pepper.

  4. Transfer the cauliflower to a baking sheet.

  5. Cut the bacon into small pieces and sprinkle on the baking sheet with the cauliflower.

  6. Bake for 15-20 minutes, stirring halfway through.
