Ingredients

  • 2 eggs (whisked)
  • 6 cubes of feta cheese
  • 1 tomato, diced or sliced
  • 1 handful of rocket or baby leaves
  • Flesh of 1 avocado, diced
  • Organic butter
  • Black pepper and Himalayan salt (if required to add taste)

Cooking Directions

  1. In a frying pan, scramble the egg mix in with the organic butter, add feta cubes and tomato in.
  2. Once cooked, serve on top of rocket leaves and top with avocado slices, salt and pepper.
