Sophie's Extreme Baked eggs, mushroom and bacon

Ingredients

  • 2 portabello mushrooms
  • 2 eggs
  • 4 rashes of bacon
  • 50g goats cheese
  • Fresh chilli or chilli flakes
  • Basil (optional)

Cooking Directions

  1. Preheat the oven to 180 degrees and line a baking dish with foil.
  2. Remove the stems of the mushrooms and wrap the bacon rashers around the outside (2 per mushroom). Place the mushrooms and bacon onto the baking dish.

  3. Top with a little goats cheese and bake for 20 minutes. Keep checking the mushrooms to ensure they are not burning.

  4. Once done remove from the oven and crack the eggs into the mushroom (being careful they don't break or fall off the mushroom).

  5. Bake for around 7 more minutes or until done.

  6. Top with the chili and basil.

  7. Tip - You can serve these alongside asparagus, tomatoes or any other salad or vegetables to turn into a perfect brunch or straightforward lunch!
