Sophie's Extreme Pancake
- 2 eggs
- 30g oats
- 1 tsp baking powder
- 1 tsp cinnamon
- 30 ml almond milk
- 1 tsp vanilla extract (optional)
- Coconut oil
- Toppings: Berries, greek yoghurt, honey, nuts.
- Heat up the coconut oil in your pan really hot and then turn the heat down to minimum.
While the pan is heating mix all of the remaining ingredients together. Add to the pan once you have turned the heat down to a minimum.
The pancake will be ready to flip when you start to see little bubbles in the top so be patient.
Make sure you keep putting a little coconut oil in there before every pancake.
