Spinach, Leek and Garlic Soup

  • 1 bag of spinach
  • 1 leek (use as much of the leak as you can the green bits are nutritious)
  • 3-4 cloves of garlic
  • 1 organic vegetarian stock cube
  • 300ml of water
  • Crushed juniper berries 3-4
  • A swirl of coconut milk
  • Garnish with parsley

Cooking Directions

  1. Finely chop and add all vegetables to a large pot.
  2. Add the water and the stock cubes and bring to the boil and then simmer for 30 mins.

  3. Add coconut milk and garnish at the end, then puree or eat as it is.
