- 1/2 small cucumber cut into pieces
- 1 dozen strawberries, washed & quartered
- 2 tbsp blueberries
- 6 mint leaves
- Juice of 1 lime
- 1 tbsp olive oil
- 2 tsp balsamic vinegar
- Optional: 1/2 cup of organic cottage cheese (only when specified on meal plan)
- Mix the lime, oil and vinegar together in a bowl.
Toss the cucumber, strawberries and blueberries in separate bowl.
Pour over enough dressing to taste and scatter with mint leaves, upon serving.
