Ingredients

  • 1/2 small cucumber cut into pieces
  • 1 dozen strawberries, washed & quartered
  • 2 tbsp blueberries
  • 6 mint leaves
  • Juice of 1 lime
  • 1 tbsp olive oil
  • 2 tsp balsamic vinegar
  • Optional: 1/2 cup of organic cottage cheese (only when specified on meal plan)

Cooking Directions

  1. Mix the lime, oil and vinegar together in a bowl.
  2. Toss the cucumber, strawberries and blueberries in separate bowl.

  3. Pour over enough dressing to taste and scatter with mint leaves, upon serving.
