- 4 Portabello Mushrooms
- Olive Oil
- 80g Feta Cheese
- 1/2 white onion, finely sliced
- 1 garlic clove, finely chopped
- 1/2 red pepper, finely sliced
- Preheat the oven to 200C/180C Fan/Gas 6.
Remove the stalks of the mushrooms. Put the rest of the mushrooms on a baking tray.
Heat the olive oil in a frying pan, add the onion and garlic and fry until soft.
Add the chopped mushroom stalks and pepper and cook until softened.
Spoon the mixture into the mushrooms. Put the feta cheese on top.
Roast the mushrooms for 6 minutes, or until the cheese has melted.
