  • 45g of quinoa
  • 200ml water
  • 1/2 red onion
  • 1/2 red pepper
  • 1 garlic clove
  • 1 yellow pepper
  • 10ml virgin olive oil

Cooking Directions

  1. Pre-heat the oven to 200 degrees.
  2. Add the quinoa and 200ml of water in a saucepan, then bring to the boil and simmer for 15 minutes or until all the water is absorbed, remove from the heat.

  3. Heat the oil in a pan. Chop the onion and red pepper into small pieces. Crush the garlic clove.

  4. Add the onions, garlic and chopped pepper to the pan for 2 minutes.

  5. Cut the top of the yellow pepper off and de-seed.

  6. Mix the onion and pepper mixture with the quinoa.

  7. Stuff the pepper with the warm mixture, place in a dish, cover with foil and cook in the oven for 25-30mins.
