Stuffed Yellow Peppers
- 45g of quinoa
- 200ml water
- 1/2 red onion
- 1/2 red pepper
- 1 garlic clove
- 1 yellow pepper
- 10ml virgin olive oil
- Pre-heat the oven to 200 degrees.
Add the quinoa and 200ml of water in a saucepan, then bring to the boil and simmer for 15 minutes or until all the water is absorbed, remove from the heat.
Heat the oil in a pan. Chop the onion and red pepper into small pieces. Crush the garlic clove.
Add the onions, garlic and chopped pepper to the pan for 2 minutes.
Cut the top of the yellow pepper off and de-seed.
Mix the onion and pepper mixture with the quinoa.
Stuff the pepper with the warm mixture, place in a dish, cover with foil and cook in the oven for 25-30mins.
