Sweet Potato Mash
- 1 large sweet potato, peeled and diced,
- 1 pinch pink salt,
- 1cm thick slice organic butter
- In a pan, cover the sweet potato pieced with water, sprinkle with the pink salt, cover and bring to the boil.
Cook for 15-20mins until soft.
Drain, leave potato in the pan, and place back on the lowest heat with the butter and mash. Add a little water or almond milk if you need to thin it out.
