Tray Baked Piri Piri Chicken
- 2 pinches of chilli flakes
- 1 clove garlic crushed
- 2 pinches of paprika
- 1/2 yellow pepper cut into chunks
- 1/2 red pepper cut into chunks
- 1/2 red onion cut into chunks
- 1 tablespoon virgin oil
- 1/2 lemon
- 1 chicken breast
- 50g brown rice (omit from 30 day lean)
- 500ml of water
- Preheat the oven to 200c.
Bring the water to a boil in a saucepan, reduce the heat to medium/low, add the brown rice and cover with a lid. Simmer until the water is absorbed and the rice is tender - this will take around 30 minutes.
Mix together the peppers and onion with 1/2 tablespoon of the oil, transfer to a large ovenproof tray.
Mix the crushed chillies, garlic and paprika with the remaining oil and lemon juice in a bowl. Add the chicken and toss to coat evenly, then place on top of the peppers and onion.
Squeeze the lemon juice over the chicken and vegetables then place onto the tray Cook in the oven for 45 minutes, until the chicken is cooked through and juices run clear.
Serve the rice, chicken and vegetables together
