Turkey and Avocado Rye Sandwich

  • 100g Diced Cooked Turkey Breast (can be cooked the night before)
  • 1/2 Avocado
  • 1 Slice of Rye Bread

Cooking Directions

  1. Preheat the oven to 180C, gas mark 4.
  2. Place a layer of foil on a baking tray, add the diced turkey pieces, then bake in the oven for 10-15 minutes, or until cooked through.

  3. Cut the avocado in half. Place one half covered in the fridge for another day.

  4. With the remaining half scoop the flesh out with a spoon and cut into chunks.

  5. Place the chunks into a bowl and mash the avocado into a consistency that would allow it to be spread.

  6. Cut the Rye Bread slice in half. Spread the avocado onto one side of each piece of bread. Add the turkey on to 1 of the pieces of bread. Add the remaining bread on top to make into a sandwich.
