Warm Vegetable Quinoa with Prawn Salad
- 45g quinoa
- 100g cooked prawns
- 10ml virgin olive oil
- 1/2 red onion
- 1/2 yellow pepper
- 1/2 courgette
- 1 garlic clove, unpeeled
- Zest and juice of 1/2 lemon
- 200ml of water
- Bring the quinoa and water to the boil in a saucepan over a medium heat, then pop on the lid, turn down the heat and simmer for 15 minutes. Put to one side when cooked.
Meanwhile heat oven to 200C, gas 6. Cut the onion and pepper into inch chunks. Toss the onion and peppers with half of the oil and place on a roasting tray. Roast for 15 minutes Cut the courgette into inch chunks and toss them and garlic with the rest of the veg and roast for another 15 minutes.
Heat the prawns through in a hot, dry non-stick pan for 2 minutes, stirring frequently.
Squeeze the roasted garlic clove out of its skin and mash it up. Stir in the remaining oil, lemon juice and zest to taste. Drizzle over the quinoa and toss together with the roasted vegetables. Mix in the cooked prawns and serve.
