Wholemeal Kiwi and Strawberry Pancakes

  • 125 grams self-raising wholemeal flour
  • 1 egg
  • 150 ml Milk of choice
  • 35g of 70% dark chocolate
  • Sliced kiwi, to serve
  • Halved strawberries, to serve

Cooking Directions

  1. Break the chocolate into small bits and melt in the microwave. To avoid burning the chocolate microwave it at 20% power for 15 seconds burst. Mix the chocolate after every 15 seconds.
  2. Place the flour into a large bowl and make a hole in the center.

  3. Crack the egg into the center of the hole. Whisk these together whilst slowly pouring in the milk until you have a thick batter.

  4. Heat up a non stick frying pan until it is hot.

  5. Once hot, turn the heat down to medium/low and pour 2-3 tablespoons of mixture into the center.

  6. After 30 seconds check the underneath of the pancake and if its nice and golden brown, flip it over and cook for a further 30 seconds or until done.

  7. Place the pancakes on plate and add the kiwi and strawberries. Drizzle the melted chocolate over the top and serve.
