Wrapped Asparagus for 2
- 8 asparagus spears
- 4 prosciutto slices/strips
- 1 tbsp virgin olive oil
- Preheat oven to 200C.
Line a baking tray and coat with olive oil.
Wash asparagus and cut 2 cm off the ends. Cut prosciutto strips into two halves, going lengthways, you should end up with 8 strips.
Wrap the strips of prosciutto around the asparagus spears. Start at the bottom of the spear and spiral up towards the tip.
Places the spears in the baking tray and bake for 5 minutes.
Remove and turn the spears over. Return to the oven for another 5 minutes or until asparagus is tender and prosciutto is crisp.
