Zesty Fennel & Pea Salad
- 1/2 teaspoon of coconut oil
- 1 cup fennel, diagonally sliced
- 1/2 tbsp finely diced red onion
- 4-5 dashes of Tabasco sauce
- 1/2 cup snow peas halved on a diagonal
- Heat the coconut oil in a frying pan over a medium heat.
Add fennel and onion and steam/saut̩, stirring regularly for around 5 mins.
Add the snow peas, cover and reduce heat and steam for about 3 mins. Add a few dashes of Tabasco sauce and serve hot or leave to cool and have later on.
